Tasty Budget Food

In an attempt to spend as little money as possible this month in order to pay more money off my credit cards, I have been very careful how much money I have spent on food. But I am not one to sacrifice taste in the name of saving money.

Here are two of the dishes I made last weekend.

Cheapskate Chicken, Mushroom and Broccoli Pie.


Serves 4

Ingredients:
2 free range chicken breasts (I managed to get mine in the reduced section)
100g broccoli florets cut into small pieces
1 Can condensed mushroom soup
2 Cloves of garlic
4 Frozen individual rounds of puff pastry
1/3 pint of chicken or vegetable stock
Small amount of butter

1. Fry the Chicken off in a little oil until cooked. Place onto some kitchen towel on a plate to remove any excess oil.
2. Mix the soup and stock together and place in a pot with the chicken, broccoli and garlic, bring to the boil and then simmer for 15 minutes. (Tip - if the sauce is too thick, add some milk. If it's too runny add some cornflour to thicken)
3. Score the pastry rounds into a pattern of your choice. Rub some butter onto the baking tray and place the rounds on top. Melt the rest of the butter and brush over the rounds before putting them into the oven. Cook according to instructions.
4. Place the chicken and broccoli mixture onto your dinner plates and place the pastry on top. Serve with potatoes and vegetables of your choice.

If like PM and me there are only two of you eating, save the remaining chicken and broccoli mixture to either have as a soup or make the same dish a couple of days later.

Tuna and Broccoli Pasta Bake


This recipe is taken from Good Food Magazine 101 Cheap Eats which is a fantastic book! Mine is well used and the food from it is always really tasty. The recipe in the book doesn't have sweetcorn in but as I have made this dish a number of times I added it to give it a little something extra. I recommend to anyone on a budget to get this book.

I've also just seen on the Amazon website that a new book from the Good Food team is due out this year - 101 Budget Dishes. I think I will put that on my birthday present list.
