Carys' Cheapy Chili

Well the bargain basement lunches are still on the menu here. Here is the recipe for my latest concoction - Carys' Cheapy Chili. Not only is this super cheap to make its dead simple:

Ingredients

1 white onion chopped
1 red pepper chopped
1 inch piece of root ginger grated or cut into small pieces
1 red chili chopped
1 large tin of kidney beans
1 large tin of chick peas
1 small tin of butter beans
1 large tin of chopped tomatoes
2 pints of veg/beef stock
1 teaspoon of hot chili powder
1/2 teaspoon of paprika
1 tablespoon of olive oil
1/2 teaspoon of sugar

To serve - Basmati Rice (see packet instructions)

1. Put the olive oil in a large saucepan and fry off the onion, pepper, chili and ginger for about 5 minutes.
2. Add the spices and fry for further minute
3. Add the beans, chick peas, tomatoes and stock. Add the sugar.
4. Add the stock, season with salt and pepper and simmer for 20 minutes or until the sauce has thickened.
5. Serve on top of some basmati rice or divide into containers with some rice for lunch time microwave dinners. Make sure you let the rice and chili fully cool down before putting in the fridge.
