Tomato & Crispy Crumb Chicken with Roast Sweet Potato, Squash and Garlic Mash

This weekend Andy and I cooked Tomato and Crispy Crumb Chicken with Roast Sweet Potato, Squash and Garlic Mash, both from the Good Food 101 Budget Dishes.

This was another of the cook books Mummy Fox got me for Christmas. I have to say this is one of the tastiest dishes I have cooked from these books so far. I think we were supposed to drain off the tomatoes but to be honest it was very tasty like this and there are alterations that could be made to make it a Urban Fox family favourite!

The mash is a healthy (well the calories are high but the saturated fat is low) and tasty alternative to normal potato mash and a cheap dish too. The recipe did say to take out the chilli seeds but we like things hot so left them in. I highly recommend this as a side dish.

In the harsh financial climate it's great to have this on your bookshelf. The recipes are tasty but cheap to make too. Buy this along with 101 Cheap Eats for super thrifty meals.
